In an effort to get her out more and increase her confidence, Husband and I have started taking Sausage to a Musical Theatre class once a week. It’s the ideal extra-curricular activity for her as it encorporates singing, dancing, acting and role-play; all the things that she loves. The only trouble is, the class is 15 minutes away by car and starts at 5pm, so by the time we get her home from school at 3.40pm, it can be a bit of a rush, which means that dinner often has to wait until we get home, and that means giving her something fairly quick to prepare so that she’s not going to bed on a full stomach.
We want her to eat healthily and avoid junk food, so we’ve turned to our friend The Egg on more than one occasion to make sure she’s getting something which is nutritionally valuable. She’s a real fan of boiled eggs, and I’ve finally managed to perfect my boiling technique, which isn’t as easy as it might sound if you want a really perfect egg! Here’s how I make mine:
- Bring a medium-sized pan of water to the boil
- Place your egg (medium to large and stored at room temperature) gently into the water using a ladle or slotted spoon to avoid cracking
- Allow to rapidly boil for exactly one minute
- After the minute is up, take the pan off of the heat and place a lid or plate on top
- Leave the egg in the pan (off the heat) for exactly 6 minutes
- Remove the egg from the water and you should have the perfect dippy egg!
- Serve with bread soliders, or asparagus for a healthy, grown up touch
